Chocolate Brownie Recipe

Oops sorry for the lateness of this post we had some lovely guests so it's going up a little late.

Sooo... I decided to make chocolate brownies! Tumblr can be such a torture when you're scrolling and up pops something like delicious looking chocolate brownies.

So I whipped out my cookbooks and tweaked a recipe slightly and make these!

Ingredients:

150g Milk Cooking chocolate,
175g Butter,
300g Caster Sugar,
130g Plain Flour,
3 Eggs,

Butter and flour your baking tray or alternatively butter and line with baking paper and preheat your oven to 175' degrees.

Place your butter and chocolate in a heat proof bowl over a pan of boiling water. Don't let the water in the pan touch the bottom of the bowl as this might burn the chocolate. Slowly let this simmer until your chocolate and butter are smooth and shiny.

Weigh out your sugar and slowly stir into the melted butter and chocolate mixture. This will go quite thick but don't worry there will be eggs soon.

Next weigh out your flour and fold this into your mixture. It gets tough towards the end but keep string until it's completely combined.

Next measure out 3 eggs into a jug or mug and slowly add to the mixture. It won't look good to start with but I promise it tastes great!

Once you've added all the eggs pour into your baking pan and put in the oven for 25-30 minutes.

Keep an eye on the top as you might need to pop some foil over the pan to stop it from burning. Once your brownie looks flaky on top and still a little squishy in the middle take it out and leave to cool.

My recommendation is this brownie is best enjoyed with a (big) scoop of Vanilla ice cream while it's still a little warm.

Perfect for a cosy evening in.

Enjoy! Katy xx

First Wedding Wednesday!

I thought I'd do a little update on how things are at the moment seeing as how something big happened lately...

G and I got engaged!

It was magical and perfect and we weren't quite sure what to do afterwards so we took pictures.

We wandered through Jesmond Dene too, admired Autumn appearing and looked at Pets Corner with the quit adorable goats.

I adore my ring and can't stop staring at it, G did so well and I think it's about as perfect as I could have imagined.

I have tons of ideas for the big day and have started compiling them all on Pinterest (if you want to follow and see what my ideas for the wedding are click the link in the sidebar). We're both falling on a November date and hopefully in about two years once we've finished with all our commitments like university and apprenticeships and have had enough time to save up.

It will definitely be crafty and with lots of DIYs so be prepared for lots of DIY posts and updates on the planning process between my usual posts.

This is, fingers crossed, my first post of #blogtober so stay tuned for more posts!

A very excited Katy

Autumn Winter favourites!

So I thought it was about time I did a little wish list of the wonderful things I've spotted recently!

Firstly I've loved the recent Cath Kidston campaign for their new tote bags and I am most definitely a totes big kinda girl! I probably carry way too much stuff but I think their totes big bags would be perfect for carrying everything to and from Uni in my final year. You can find their new tote bags here!

Next thing is a MAC lipstick! So Chaud which I love the look of especially for the cold Autumn/Winter we're probably going to have very soon.
I can imagine the reddish coral colour would really pop with pale winter skin!

I spotted this letter set in John Lewis and it reminded me of the gorgeous prints that Liberty have!
Personally I love a handwritten letter and think the idea of writing on these would be amazing. I know lots of people who would love to receive a letter in these.

Something I've been watching! Zoella and Hannah Maggs.
Both of these ladies are so lovely and just great fun to watch! I wish I could make such amazing videos as they do.

My favourite recent find is Shore Projects watches!

These watches are very classic and simple so I think they'd blend well with most outfits. I also love that the straps on these watches are interchangeable as they have so many patterns you could buy as many as you like and change with your outfit!

These are my top straps! The Polka Dot straps are £25, the Classic straps are £20 and the Leather straps are £30.

That about sums up my favourites for this post! I hope you like some of the things I've posted I certainly do.

*I chose all of these products myself and was not paid to talk about any of them. But I really do love them and wouldn't talk about them if I didn't.

Banana Chocolate Muffins!

Once again I had left over Bananas! So I thought I'd whip them into a quick muffin recipe.
Banana and chocolate together are one of my favourite pairings, banana for the goodness and chocolate for the naughtiness!

To get started to you'll need:

225g Self Raising flour
100g Caster sugar
1 Teaspoon baking powder
1/2 Teaspoon salt
150g Cooking chocolate - chopped into chunks
1 Egg
6 Tablespoons milk
2 Tablespoon melted butter
300g Mashed bananas

Also your baking equipment like; a baking pan, mixing bowl and scales.

Start off by measuring out your flour, sugar, salt, baking powder and chocolate into a bowl.

Mix these together to cover the chocolate in flour and create a well in the middle.

Next put the mashed banana, milk, melted butter and egg into a jug and mix together well.

Add the wet ingredients into the bowl and mix until combined. Try not to over mix as that will stop your muffins from rising properly.

Spoon into your muffin cases and put in to the oven for 20-25 minutes.

Take out of the tin and leave to cool, then enjoy!

I'd recommend a cup of tea as the perfect accompaniment for these guys.

Introducing Lux

We got a little something last week that G and I have been wanting for a while now....

A kitten!

She's a princess and 13 weeks old. She has G and I wrapped around her tiny paw and knows exactly how to get what she wants. She loves to play with empty things like kitchen roll tubes, empty bottles and anything she can get her paws on!

She's an angel who loves to snuggle and play and is generally crazy.
We love her oh so much.
Follow me or G on Instagram to see more of this wee one!
